Victory pig pizza recipe details

Ingredients
Serves: 6- Extra-virgin olive oil
- Dough:
- 2 (1/4 ounce) packages dry yeast, dissolved and proofed in 1 cup warm water
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 1/2 cups sifted flour
- Topping:
- 1 (28 ounce) can whole tomatoes. Crushed tomatoes just don’t do the job.
- 1 onion, sliced very thin
- 8 ounces mozzarella cheese, shredded or sliced (your preference). The more cheese, the better.
Preparation method
Prep: 10 mins | Cook: 30 mins | Extra time: 35 mins, rising1. Preheat oven to 450 degrees F. Coat large, lidded baking sheet with abundant olive oil, enough so that the dough will “fry” in the oven. The pan should be well coated on bottom and up sides.
2. Knead dough ingredients together in mixing bowl until smooth. It is a soft dough. Cover and let rise in a warm place for 20 minutes.
3. Stretch the dough out and then place in pan and stretch to fill bottom of pan. Let rise again for 10 to 15 minutes.
4. Rub top of dough lightly with more oil. Squish the tomatoes to break them up a bit and place on top of dough. Add onions, salt and pepper. Bake 10 to 15 minutes.
5. Remove pizza from oven and cover with cheese. Bake another 10 to 15 minutes until corners of pizza are browned and cheese melted.
Note:
It is necessary to turn on the kitchen exhaust fan since some of the oil will bubble out of the pan and smoke when it hits the hot heating element.
