Vegetables in coconut milk recipe details
Ingredients
120 ml | coconut milk |
2 tbsp | olive oil |
2 clove(s) | garlic, chopped |
1 | eggplant, diced |
1 | sweet potato, diced |
2 tsp | water |
100 g | green beans, cut |
500 g | asparagus, trimmed and cut |
200 g | fresh spinach |
30 g | basil leaves |
Instructions
Cook the garlic in a bir of oil in a frying pan for 30 seconds. Add eggplant, sweet potato and water and cook for 5 minutes over medium heat. Add the beans, cover and cook for another 4 minutes. Add asparagus and coconut milk and cook for another 3 minutes. Add spinach and basil. Toss well until spinach and basil soften slightly.Preparation time:
