Ingredients

2 large carrots, grated
1 large courgette, trimmed, soft flesh and seeds removed, grated
1  onion, finely chopped
60 g Feta cheese, crumbled
25 g flour
¼ tsp ground cumin
1 tbsp parsley, chopped
1  egg
25 g butter
2 tbsp vegetable oil
salt and pepper

Instructions

In a bowl, combine, carrots, courgette, Feta and onion. Mix the flour with cumin and parsley and season with salt and pepper. Add to the vegetable mixture, add the egg and mix gently.

Heat oil and butter in a pan. Put spoonfuls of the mixture in the hot fat, flatten and fry on each side for about 2 minutes.

Drain briefly on kitchen paper and serve hot.
