Vanilla ice cream with sweet red beans and green tea sauce recipe details
Ingredients
150 ml | single cream |
350 ml | milk |
5 | egg yolks |
100 g | sugar |
1 | vanilla pod |
2 tbsp | sugar |
1 tsp | cornstarch |
1 tsp | green tea powder (Japan or Asia shop) |
1 tsp | water |
1 can(s) | sweet red beans (Japan or Asia shop) |
1 pinch(es) | salt |
50 ml | water |

Instructions
In a saucepan bring the cream and 150 ml of the milk with half a vanilla pod and pulp and 100g sugar to a boil. In a bowl, whisk 4 egg yolks until creamy. Add the hot cream mixture to the egg yolks, stirring constantly. Return all into the saucepan and stir over low heat until thickened. Don’t allow to boil! Take from heat and allow to cool a bit. Remove the vanilla pod and transfer the mixture into an ice cream maker. If you don’t have an ice cream maker freeze the ice cream in a metal bowl in the freezer. Stir with a wire whisk every 20 minutes.In a saucepan, combine 150ml of the milk with the other half of the vanilla pulp and pod and 2 tablespoons of sugar and bring to a boil. Mix together the cornstarch and the remaining milk, add the last egg yolk and stir until smooth. Pour the boiling milk to the mixture and stir well. Return all into the saucepan and cook stirring over low heat until thickened. Take from heat. Mix the tea powder into 2-3 tablespoons of water and stir until smooth. Season the sauce with the tea. Allow to cool and refrigerate the sauce until the ice-cream is ready to serve.
Heat the beans with a pinch of salt and 3 tablespoons of water. Allow to cool but remove from the refrigerator half an hour before serving.
To serve:
Spoon some beans in the middle of the plates. Top with a scoop of the ice cream. Drizzle with the green tea sauce. Serve garnished with mint and physalis.
