Ingredients
For the Base: | |
10 | shortbread biscuits |
50 g | unsalted butter, melted |
1 packet(s) | vanilla sugar |
For the Filling: | |
500 g | cream cheese, low-fat |
350 g | tofu, well drained |
8 tbsp | granulated sugar substitute, eg sucralose |
60 ml | vanilla liqueur, eg Galliano |
2 tbsp | cornflour |
12 | eggs, whites only |
Instructions
Preheat the oven to Gas Mark 4, 180°C, 350°F.Place the biscuits in the bowl of a blender or food processor and process to a fine powder. Add the butter and process until well coated and finally add the vanilla sugar. Press into the base of an 8-inch, 20cm cake tin and bake for about 10 minutes and allow to cool.
Increase the oven temperature to Gas Mark 7, 220°C, 425°F.
In a large bowl combine the cheese, tofu, sugar substitute, liqueur, cornflour and vanilla extract, using an electric mixer to blend until smooth. Stir in the egg whites and pour into the base.
Bake for 1 hour 20 minutes or until the centre no longer looks wet and shiny.
Remove from oven and run a knife around the inside edge of the tin. Turn off the oven and return the cake to the oven with the door closed for another 2 hours.
Chill for several hours, preferably overnight and serve with fresh fruits.
