Unbelievably delicious coffeecake recipe details
- Ingredients
- 2-1/2 cups all-purpose flour
- 3/4 cup sugar
- 1 cup brown sugar
- 1/8 teaspoon nutmeg
- 1 teaspoon cinnamon
- 3/4 cup vegetable oil
- 2/3 cup crushed pecans
- 1 egg
- 1/2 teaspoon salt
- 2 teaspoons baking soda
- 1 cup buttermilk*
- Optional garnish:
- Cool Whipwhipped topping or whipped cream
- Cinnamon sugar
- Fresh fruit slices (strawberry, kiwi, peach)
* May substitute 1 Tablespoon lemon juice or vinegar plus milk to make 1 cup. Let stand 5 minutes before adding to batter.
Preheat oven to 350 degrees. Combine flour, sugar, brown sugar, nutmeg, cinnamon, and oil until crumbs are formed. Remove 1/3 cup crumbs. In separate bowl, mix pecans and 1/3 cup crumbs; set aside for topping. Add eggs, salt, baking soda, buttermilk to remaining crumbs and mix well. Pour into a greased 2-quart (8 x 11-1/2 inches) or 3-quart (9-1/2 x 13-1/2 inches) glass baking dish. Sprinkle topping over batter. Bake for 30 minutes or until cake seems firm on top. It’s fine when it appears collapsed in center as long as sides have lifted slightly from baking dish.
Serve warm. Just before serving, place a dollop of Cool Whip or whipped cream on each piece. Sprinkle cinnamon sugar and top with fresh fruit slices.
Serves: 6 with 2-quart dish, 8 with 3-quart dish.Share this content!
