Turkey meatballs in a vegetable ragout recipe details
Ingredients
250 g | potatoes, peeled and diced |
salt and freshly ground black pepper | |
85 g | minced turkey meat |
1 tbsp | oil |
1 tbsp | onion, chopped |
30 g | spinach |
30 g | mushroom, sliced |
1 tsp | tomato puree |
100 g | tomato, diced |
100 ml | vegetable stock |
40 g | peas |
1 tbsp | green olives, sliced |
1 tbsp | capers |
sugar | |
1 tsp | basil, chopped |
1 tsp | parsley, chopped |
100 ml | milk |
2 tbsp | butter |
½ tsp | paprika powder |
freshly ground nutmeg |
Instructions
Cook the potatoes in salted water until soft. Drain.Mix together the turkey mince and the paprika powder. Season with salt and pepper. Knead well. Shape into small balls and fry the balls in hot oil from all sides until golden brown. Take the meatballs out of the pan and set aside.
Sauté in the pan the onion, spinach and the mushrooms for 2 minutes. Stir in the tomato purée and the diced tomato. Add the stock and cook for 2-3 minutes. Add the peas, olives, basil, parsley and capers. Season to taste with salt, pepper, oregano and sugar. Return the meatballs and cook for 2 more minutes.
Heat the milk and the butter. Mash the potatoes and stir in the milk mixture. Add more milk, if necessary. Season to taste with salt and nutmeg.
Serve the meatball and vegetable ragout with the mashed potatoes.
