Turkey curry recipe details
Ingredients
leftover turkey for four | |
45 ml | oil |
1 | onion, finely chopped |
1 clove(s) | garlic, crushed (use 2 if they are small) |
1 tbsp | coriander, ground |
1 tsp | tumeric |
½ tsp | ginger, ground |
½ tsp | cumin seed |
½ ml | chilli powder |
a sprinkling of fenugreek | |
2 | cardamoms, whole |
2 | cloves, whole |
1 piece(s) | cinnamon stick (about 5cm) |
lemon juice | |
salt |
Instructions
Cut the left-over turkey into cubes.Heat the oil in a pan and sauté the onion until soft, not brown. Add the garlic, taking care that it does not burn.
Add the coriander, turmeric, ginger, cumin seed, chilli powder and fenugreek. Fry gently, mellowing the spices to bring out their full flavour. Take care not to let the mixture burn.
Add the turkey and stir. Add sufficient water to just cover.
Tie the cardamoms, cloves and cinnamon stick in a piece of muslin; add to the curry, tying the end of the string to the handle of the pot. Bring to the boil and reduce heat to simmer. Do not cover and leave to simmer for 30 minutes.
Add a squeeze of lemon juice and salt to taste.
Remove the bundle of spices and throw away.
Serving suggestion:Serve with basmati rice and a salad.
The number of people this curry will feed is obviously determined by the amount of leftover turkey you have. You can always stretch it with some cooked chicken.
