Turkey Breast in Puff Pastry recipe

|125 g||blue Stilton, crumbled|
In a pan heat the oil. Fry the turkey steaks until golden all around. Season with salt and pepper.
Drain the apricots. Mix the egg yolk with 2 tablespoons of water.
Roll out the pastry. Sprinkle 1 teaspoon of breadcrumbs onto each pastry sheet. Add a steak and 2 apricot halves. Sprinkle with the cheese. Fold over the pastry to a parcel and press the edges to seal. Brush with the egg yolk. Place the parcels onto a lined baking tray.
Bake in the preheated oven at 180°C for 20-25 minutes until golden brown.
