These open-faced avocado and tuna sandwiches are quick to make and deeeelicious!

Ingredients
Serves: 2- 4 slices bread
- 1 ripe avocado, peeled, pitted and chopped
- 2 (3.5 ounce) cans tuna
- 1 tablespoon mayonnaise
- 2 tablespoons chopped green onions
- salt and pepper to taste
- a few leaves lettuce or spinach
- 4 tablespoons shredded Cheddar cheese
Preparation method
Prep: 7 mins | Cook: 3 mins1. Preheat oven to 425 degrees F (220 degrees C).
2. Lightly toast bread and place slices on an ungreased pan.
3. In a bowl, add avocado, tuna, mayo, green onions, salt and pepper and mix lightly with fork.
4. Spoon mixture evenly on the slices of bread. Add a few leaves of spinach (or lettuce) to top each slice and then cover with shredded Cheddar.
5. Place in preheated oven until cheese melts, about 3 minutes.
6. Serve and enjoy!
