Ingredients
1 ½ kg | trout, washed, cleaned, fins cut off |
120 ml | white wine |
1 | lemon, cut in slices |
4 sprig(s) | fennel |
2 tbsp | butter |
Fennel butter: | |
60 g | butter |
juice of 1 lemon | |
1 tbsp | fresh fennel leaves, chopped |
Instructions
Preheat oven to 180°C.
Place trout in a greased baking dish. Place lemon slices, half the fennel sprigs, wine and some butter inside. Top with remaining fennel sprigs and butter. Bake for about 12-15 minutes, depending upon size of trout.
In a small saucepan melt butter over low heat. Add lemon juice, salt and pepper and chopped fennel. Stir to combine well and poure over baked trout.
