Tortilla with Olives and Cheese recipe

|1||red bell pepper, diced|
|1 bunch(es)||spring onions, sliced|
|1 clove(s)||garlic, minced|
|1 tbsp||vegetable oil|
|salt and pepper|
|50 g||black Olives, pitted and sliced|
|100 g||grated cheese, e.g. Manchego|
|1 tbsp||creme fraîche or sour cream|
Heat the vegetable oil in a large pan and sauté onion and garlic for some minutes. Add the vegetables and cook stirring for another 3 minutes. Season with salt and pepper. Mix the grated cheese with the eggs until well combined and pour over the vegetables.
Transfer the pan into the preheated oven, 200°C/Gas Mark 3, for approximately 20 minutes or until set and golden.
Serve garnished with parsley and dabs of crème fraîche.
