Tortellini soup recipe details
Ingredients
230 g | Tortellini |
400 ml | vegetable broth |
500 g | tomatoes, chopped |
120 g | mushrooms, sliced |
120 g | spinach |
50 g | Parmesan cheese |
6 leaves | fresh basil |
4 clove(s) | garlic, minced |
1 tsp | butter |
Instructions
In a pan sauté finely minced garlic in butter. Take care not to burn it. Add broth and bring to the boil.Add tortellini and let simmer for about 6-8 minutes.
Meanwhile clean the spinach so that it is without stems. Then add the tomatoes and torn spinach, sliced mushrooms, and basil. Let simmer for 2-3 minutes.
Stir in grated parmesan and serve.
