Ingredients
2 | onions, chopped |
2 tbsp | oil |
8 | tomatoes, sliced |
400 ml | vegetable stock |
200 g | Tortellini, with vegetable filling |
2 | courgettes, sliced |
salt and pepper, to taste | |
1 tbsp | parsley, chopped |
1 clove(s) | garlic, minced |
500 g | tomato puree |
Instructions
Cook the tortellini in salted water until done. Drain.
In a saucepan, heat the oil. Add the garlic and the onions. Sauté over low heat until lucent. Pour in the tomato puree, tomatoes and stock. Bring to a boil, cover and simmer over low heat for 15 minutes.
After 10 minutes of cooking, stir in the courgettes and the parsley. Season to taste with salt and pepper. Add the cooked tortellini and simmer until the pasta is hot.
