Ingredients
ripe tomatoes, cleaned and quartered | |
sea salt |
Instructions
Place the tomatoes with the skin side down either on a lined baking tray or onto the drying trays of a food dehydrator and dry them completely. In my food dehydrator I had to leave them on medium for 24 hours. In the oven at 80°C, I estimate overnight should be sufficient, it depends of course on the size of the tomatoes. Mine were rather small ones.
Weigh the dried tomatoes and add the same weight of sea salt. Combine in a blender and process to a powder.
Sprinkle on bread and butter or roasted bread, drizzled with extra vergin olive oil. Use to season pasta, rice, potatoes, vegetables and salads as well as steaks and chicken.
