Ingredients

250 g canned chopped tomatoes
1 tbsp olive oil
1 small onion, chopped
300 g rice
120 ml dry white wine
60 g Parmesan cheese, grated
2 tbsp butter
600 ml vegetable broth
salt and pepper, to taste

Instructions

In a small saucepan, combine tomatoes and their juice and broth. Bring just to a simmer; keep warm over low heat.

In another saucepan, heat oil and add onion; season with salt and pepper. Cook until onion has softened, 3 to 5 minutes.

Add rice to the onions and cook, stirring, 1 to 2 minutes. Add wine and keep stirring until absorbed, about 1 minute.

Add about tomato mixture to rice and simmer over medium-low heat, stirring occasionally, 4-5 minutes. Cook until rice is tender, about 25 minutes.

Remove pan from heat and stir in cheese and butter; season with salt and pepper.
