Tomato risotto recipe details
Ingredients
250 g | canned chopped tomatoes |
1 tbsp | olive oil |
1 small | onion, chopped |
300 g | rice |
120 ml | dry white wine |
60 g | Parmesan cheese, grated |
2 tbsp | butter |
600 ml | vegetable broth |
salt and pepper, to taste |
Instructions
In a small saucepan, combine tomatoes and their juice and broth. Bring just to a simmer; keep warm over low heat.In another saucepan, heat oil and add onion; season with salt and pepper. Cook until onion has softened, 3 to 5 minutes.
Add rice to the onions and cook, stirring, 1 to 2 minutes. Add wine and keep stirring until absorbed, about 1 minute.
Add about tomato mixture to rice and simmer over medium-low heat, stirring occasionally, 4-5 minutes. Cook until rice is tender, about 25 minutes.
Remove pan from heat and stir in cheese and butter; season with salt and pepper.
