Try these tasty enchiladas in the toaster oven. Two important things — your oven must be able to take and 9×9 pan. And make sure your pan is at least two inches high.

Ingredients
Serves: 6- 1 1/2 cup cooked chicken meat
- 1/2 onion, finely chopped
- 1/2 cup sour cream
- 1/2 cup shredded Cheddar cheese
- 1 tablespoon fresh flat parsley or cilantro
- 1/2 teaspoon dried oregano
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon salt (optional)
- 1 (8 ounce) can tomato sauce
- 1 tablespoon chili powder
- 1/3 cup finely chopped green bell pepper
- 1 clove garlic, minced
- 4 (10 inch) flour tortillas
- 8 ounces enchilada sauce (more if desired)
- 1/2 cup shredded Cheddar cheese
Preparation method
Prep: 20 mins | Cook: 20 mins1. Preheat toaster oven to 350 degrees F.
2. In a large bowl, stir together the chicken, onion, sour cream, Cheddar cheese, parsley, oregano, pepper, salt, tomato sauce, chili powder, green pepper, and garlic.
3. Fill tortillas with mixture, roll, and place in 8×8-inch baking dish. Cover with enchilada sauce and sprinkle with cheese.
4. Bake for 20 minutes.
