Tia maria ice cream recipe details
Ingredients
500 ml | double cream |
6 large | eggs, yolks only |
100 g | fresh roasted coffee beans |
110 g | caster sugar |
30 ml | Tia Maria, use Kahlua if necessary |
Instructions
Whisk the yolks and cream together in a heatproof bowl. Add the coffee beans.Heat a saucepan of water large enough to support the bowl until simmering and place the bowl with the yolk and coffee mixture on it. Slowly whisk in the sugar and continue to whisk until the sugar dissolves and the mixture thickens sufficiently to coat the back of a spoon. Do not allow to boil.
Remove the bowl from the heat and continue to stir for several minutes. Add the liqueur. Cover bowl with cling film or foil, al;low to cool until just warm and then refrigerate for at least 3 hours for the coffee flavour to infuse and intensify.
Strain the mixture into a freezer-proof container, cover and freeze for about 8 hours or overnight until firm. Alternatively freeze in an ice cream maker to manufacturers’ instructions.
The alcohol content will prevent this ice cream from becoming too solid.
