Ingredients
Serves: 6- 1 pound dry red kidney beans, soaked overnight
- 1/2 medium onion, minced
- 1 bell pepper, minced
- 2 stalks celery, minced
- 2 bay leaves
- 1 bunch fresh parsley, minced
- Larwry’s(R) Seasoned Salt, to taste
- Garlic powder, to taste
- Onion powder, to taste
- Freshly ground black pepper, to taste
- Cayenne pepper (optional), to taste
- Hot cooked rice
Preparation method
Prep: 10 mins | Cook: 3 hours 30 mins1. After beans have soaked overnight, drain and place in 4 quart Dutch oven with enough water to cover by 1-inch. Season the beans with the seasonings. Saute the vegetables in 2 tablespoons butter or margarine until onions are translucent; add to beans. Bring beans to a full boil; reduce heat to medium-low. Cook beans for 3 to 3 1/2 hours or until beans are fork tender and have made a creamy texture to the liquid. Taste for seasonings and serve over hot cooked rice. ENJOY!!!
