Ingredients
750 g | pumpkin |
½ l | milk |
10 | almonds, sweet, hacked |
3 | almonds, bitter, hacked |
1 | cinnamon stick |
3 tbsp | sugar |
1 dash(es) | salt |
1 tbsp | potato starch |
1 tbsp | butter |
2 | egg yolk |
1 tsp | rose water |
6 tbsp | cream, sweet |
3 tbsp | cream, sour |
Instructions
Peel and dice the pumpkin. Cook the pumpkin dices in 1 l water until they are smooth and strain them trough a sieve.Mix the pumpkin mash with the milk and add the almonds, the cinnamon stick, sugar and salt.
Bring the soup to a boil and then thicken the soup with potato starch. Add the egg yolk, rose water and butter to refine the soup. Finally stir in the cream.
