Sweet Pumpkin Soup recipe

|3||almonds, bitter, hacked|
|1 tbsp||potato starch|
|1 tsp||rose water|
|6 tbsp||cream, sweet|
|3 tbsp||cream, sour|
Peel and dice the pumpkin. Cook the pumpkin dices in 1 l water until they are smooth and strain them trough a sieve.
Mix the pumpkin mash with the milk and add the almonds, the cinnamon stick, sugar and salt.
Bring the soup to a boil and then thicken the soup with potato starch. Add the egg yolk, rose water and butter to refine the soup. Finally stir in the cream.
