Sweet Potatoes recipe

Ingredients
2 kg | sweet potatoes |
90 ml | coconut milk |
1 tbsp | maple syrup |
½ tsp | salt |
60 g | shredded coconut |
2 tbsp | olive oil |
Instructions
Preheat your oven to 180°C and grease 6 ramekins.
Wrap each sweet potato in foil, pierce numerous times with a fork and bake in the oven until each is baked through. Baking time depends on the size of sweet potatoes
Remove the potatoes from the oven, let them cool for a few minutes, and cut each sweet potato in half. Scrape the flesh of each potato into a medium mixing bowl.
Mash the sweet potatoes and combine with the coconut milk. Stir in maple syrup and salt.
Spoon the sweet potato mixture into individual baking dishes sprinkle with coconut, drizzle with olive oil and bake uncovered, roughly 30 – 40 minutes.
