Ingredients
pastry shell, unbaked | |
450 g | sweet potatoes, mashed |
400 ml | sweetened condensed milk |
2 medium | eggs |
½ tsp | salt |
½ tsp | cinnamon, ground |
½ tsp | ginger, ground |
½ tsp | nutmeg, ground |
Instructions
Cook potatoes until tender, drain, peel, and mash.Preheat oven to 200°C.
Combine sweet potato mash, milk, eggs, salt and spices and beat until smooth.
Pour mixture into pastry shell and bake for 15 minutes. Reduce temperature to 150°C and and continue baking for 25-30 minutes.
Cool and refrigerate prior to serving
