sweat n sour asparagus and mint salad recipe details
Ingredients
2 bunch(es) | thin green asparagus, about 250 g after trimming |
2 tsp | sugar |
2 tsp | sea salt |
180 ml | white wine vinegar |
100 g | sugar |
1 tbsp | light soy sauce |
¼ cup(s) | mint leaves, finely shredded |
Instructions
Wash asparagus and discard woody ends. Peel lower parts of stems if necessary.Slice the asparagus on the diagonal. Combine in a bowl with sugar and salt, mix well and leave to stand for 2 hours.
Meanwhile combine vinegar and sugar in a small saucepan and stir over heat until sugar dissolves.
Simmer, uncovered and without stirring, for about 10 to 12 minutes until reduced by one-third and slightly syrupy.
Set aside to cool.
Mix cooled vinegar syrup with soy and add with mint leaves to pickled asparagus.
