Ingredients

2 bunch(es)	thin green asparagus, about 250 g after trimming
2 tsp	sugar
2 tsp	sea salt
180 ml	white wine vinegar
100 g	sugar
1 tbsp	light soy sauce
¼ cup(s)	mint leaves, finely shredded

Instructions

Wash asparagus and discard woody ends. Peel lower parts of stems if necessary.

Slice the asparagus on the diagonal. Combine in a bowl with sugar and salt, mix well and leave to stand for 2 hours.

Meanwhile combine vinegar and sugar in a small saucepan and stir over heat until sugar dissolves.

Simmer, uncovered and without stirring, for about 10 to 12 minutes until reduced by one-third and slightly syrupy.

Set aside to cool.

Mix cooled vinegar syrup with soy and add with mint leaves to pickled asparagus.
