Ingredients
Serves: 12- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 3 cups finely shredded carrots
- 1 1/2 cups vegetable oil
- 4 large eggs
- 2 teaspoons vanilla
- 1/2 cup chopped walnuts
- 1/2 cup raisins
Preparation method
Prep: 1 hour | Cook: 50 mins1. Preheat oven to 325 degrees F (165 degrees C).
2. In a large mixing bowl.combine first seven ingredients,add carrots,oil,eggs and vanilla, Beating for 2-3 minutes on medium. Stir in nuts and raisins. Pour into greased and floured 13″ x 9″ baking pan.
3. Bake for 50 to 60 minutes or until a toothpick inserted near the center comes clean..
4. Cool on rack.
