Stuffed Trout recipe

|2||whole trout, about 450g each, cleaned and scales removed.|
|50 g||fresh mushrooms, cleaned and sliced|
|4||spring onions, cleaned and finely sliced|
|2 tbsp||Parmesan cheese, grated|
|salt and fresh ground pepper, to taste|
Mix together the mushrooms, onions and cheese. Spoon the mixture into the cavity of each fish and then season well.
Close the cavities with wooden skewers of tooth picks pre-soaked in water and grill about 4 inches, 10cm from the heat for about 7 minutes on each side until the flesh flakes easily.
Serve immediately with boiled new potatoes in butter.
