Ingredients
For the pastry base: | |
230 g | flour |
1 tbsp | sugar |
1 tsp | salt |
140 g | soft butter |
1 medium | egg yolk |
4 tbsp | cold water |
For the filling: | |
1.1 kg | strawberries, hulled and sliced |
100 g | sugar |
1 | lemon, juice and grated peel |
5 tbsp | flour |
For the topping: | |
200 g | flour |
20 g | sugar |
40 g | brown sugar |
1 tsp | cinnamon |
½ tsp | salt |
1 ½ tsp | baking powder |
230 g | whipping cream |
Instructions
In a bowl, mix together the flour, sugar, salt, butter, egg yolk and water. Knead until well combined. Add more water if necessary. Allow to rest for 1 hour. Line a cake tin with the dough and form edges, press the edges against the tin. Place into the fridge for 30 minutes.Combine the sugar, lemon zest and lemon juice, strawberries and the flour. Stir well. Preheat the oven to 200°C. Pour the strawberry filling into the cake form and bake for 30 minutes.
Meanwhile, mix together the flour, white and brown sugar, cinnamon, salt and baking powder. Stir in the cream. Spread the cake with the topping. Reduce the heat to 190°C and bake for 25 minutes. Cover the cake with aluminium foil and bake for 5-10 more minutes.
Allow to cool before serving.
