Ingredients
6 | beef sirloin steaks, 250g each |
25 g | butter |
For the marinade: | |
2 tbsp | soft sugar |
2 tbsp | soy sauce |
1 | lemon, juice |
1 clove(s) | garlic, chopped |
1 tbsp | fresh ginger, finely chopped |
1 tbsp | olive oil |
salt and pepper | |
For the sauce: | |
125 ml | red wine |
3 tbsp | red currant jelly |
1 tbsp | mustard |
225 g | plums, pitted and halved |
Instructions
Place the steaks in a shallow casserole dish. Mix the ingredients for the marinade and pour over the steaks. Allow the meat to marinate for at least 4 hours. Turn over every now and then.In a skillet, heat the butter. Remove the steaks out of the marinade and pat dry. Set the marinade aside, for later use.
Sear the steaks for a few minutes on each side to the doneness you like. Remove from the skillet and keep warm.
Deglaze the drippings in the pan with the red wine. Strain the marinade through a sieve and add into the skillet. Stir in the red currant jelly and the mustard. Add the plums and simmer the sauce for 10 minutes. Season to taste with salt and pepper.
On each plate, ladle some sauce and plums and place a steak on top. Serve immediately, e.g. with boiled potatoes.
