Spinach Salad with Cheese recipe

|500 g||fresh spinach leaves|
|2 l||hot water|
|2||hard boiled eggs|
|200 g||Kasar cheese, if available (Turkish cheese), alternatively: Feta cheese|
|3 tbsp||extra virgin olive oil|
|1 tbsp||red wine vinegar or lemon juice|
|salt and pepper|
|1 pinch(es)||thyme, rubbed leaves|
|1 clove(s)||garlic, pressed|
Blanch the spinach in boiling water, strain, chill, drain, then spread in a shallow salad bowl. Peel then thinly slice the onion into rings. Divide on top of the spinach. Carve the tomatoes, place for 30 seconds into boiling water, peel and slice. Arrange the tomatoes on the spinach. Dice the hard boiled eggs and grate the cheese, then sprinkle both over the salad.
Mix oil, vinegar, salt, pepper, thyme and garlic. Drizzle the salad with the dressing. Allow the salad to stand for some minutes to develop its full flavour.
