Ingredients

7  bread rolls, of the previous day
250 ml vegetable stock
1  onion, diced
1 tbsp olive oil
500 g fresh spinach, stems removed, chopped
4 tbsp mixed herbs (parsley, chervil, marjoram, tarragon), chopped
2 clove(s) garlic, minced
1 tsp sea salt
100 g crème fraîche
4  eggs
3 tbsp wholemeal flour
3 tbsp breadcrumbs
50 g pistachios, chopped
200 g puff pastry
1  egg, whisked, to brush

Instructions

Grease a loaf pan (30*15 cm) and preheat the oven to 200°C.

Dice the bread rolls, place in a bowl and soak them in the vegetable stock. Sauté the finely chopped onions in hot olive oil in a saucepan, add the spinach, cover and stew for 5 minutes. Add the garlic and the herbs.

Spoon the ingredients of the saucepan and all the other ingredients except the puff pastry and the extra egg to brush into the bowl to the soaked bread rolls. Knead together until well combined.

Line the loaf pan with parchment paper. Strongly press the mixture into the pan.

Roll out the puff pastry as a cover, brush the inside with water and place and lightly press on top of the loaf and onto the rim of the pan. If desired garnish the pastry lid with leaves or flowers, cut out of the remaining puff pastry. Brush the pastry with the whisked egg and bake for 35-40 minutes until golden brown.

Serve warm or cold with roast potatoes and garnished with basil leaves.
