Spinach and Ricotta Stuffing recipe

|2 tbsp||olive oil|
|1 large||onion, finely chopped|
|3 clove(s)||garlic, finely chopped|
|550 g||baby spinach, blanched and drained|
|50 g||pine nuts, dry roasted|
|150 g||semi-dried tomatoes, finely chopped|
|some||black pepper, freshly ground|
|some||nutmeg, freshly grated|
Heat the oil and stir-fry the onion and garlic until soft.
Add spinach and cook, stirring, for about 3 minutes until dry. Remove from the heat and let cool.
Add the the pine nuts, breadcrumbs, ricotta and semi-dried tomatoes and mix well. Season to taste.
