Ingredients
2 tbsp | olive oil |
1 large | onion, finely chopped |
3 clove(s) | garlic, finely chopped |
550 g | baby spinach, blanched and drained |
50 g | pine nuts, dry roasted |
60 g | breadcrumbs |
400 g | ricotta |
150 g | semi-dried tomatoes, finely chopped |
some | salt |
some | black pepper, freshly ground |
some | nutmeg, freshly grated |
Instructions
Heat the oil and stir-fry the onion and garlic until soft.Add spinach and cook, stirring, for about 3 minutes until dry. Remove from the heat and let cool.
Add the the pine nuts, breadcrumbs, ricotta and semi-dried tomatoes and mix well. Season to taste.
