Ingredients

2 tbsp olive oil
1 large onion, finely chopped
3 clove(s) garlic, finely chopped
550 g baby spinach, blanched and drained
50 g pine nuts, dry roasted
60 g breadcrumbs
400 g ricotta
150 g semi-dried tomatoes, finely chopped
some salt
some black pepper, freshly ground
some nutmeg, freshly grated

Instructions

Heat the oil and stir-fry the onion and garlic until soft.

Add spinach and cook, stirring, for about 3 minutes until dry. Remove from the heat and let cool.

Add the the pine nuts, breadcrumbs, ricotta and semi-dried tomatoes and mix well. Season to taste.
