Ingredients
200 g | fresh spinach leaves |
1 clove(s) | garlic |
1 | onion |
1 tbsp | butter |
600 ml | hot vegetable stock |
150 g | single cream |
salt and pepper | |
1 bunch(es) | parsley |
1 | egg yolk |
Instructions
Roughly chop the spinach. Finely chop the onion and the garlic.In a skillet, melt the butter and sauté the onion and the garlic until lucent. Add the spinach and toss until wilted. Pour in the hot vegetable stock and the single cream and heat up the soup, but don’t allow to boil. Season to taste with salt and pepper.
Finely chop the parsley. Quickly whisk the egg yolk into the hot soup. Stir in the parsley and serve immediately.
