You know how you serve steak alongside spinach and mushrooms? How ’bout just stuffing those sides in the meat itself? That’s what some guy thought, anyway. The steak juices drip down and flavor the veggies, creating one perfect package of beef tenderloin goodness.

Ingredients
Serves: 8- 1/2 pound fresh mushrooms, chopped
- 4 green onions, sliced
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 2 (10 ounce) packages fresh spinach leaves
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1 (3 1/2 pound) beef tenderloin roast
- 1/4 teaspoon onion powder
- 1/4 teaspoon black pepper
Preparation method
Prep: 30 mins | Cook: 50 mins | Extra time: 10 mins, resting1. Preheat oven to 425 degrees F.
2. Pour 1 tablespoon oil into a large skillet and set over medium heat. Add mushrooms and onions; cook in hot oil for about 8 minutes, until mushrooms are softened and onions are translucent. Stir in 1 minced garlic clove.
3. Dump the spinach leaves into the skillet and season with 1/2 teaspoon salt and the 1/4 teaspoon cayenne. Stir to coat with mushrooms and onions. Cook spinach until the leaves lose their shape, about 3 minutes.
4. Butterfly-cut the tenderloin: slice it down the middle lengthwise, leaving a hinge, and open it like a book. Then make smaller lengthwise cuts on either side of the tenderloin in the same manner so that the beef lies flat.
5. Pour the spinach mushroom mixture on top of the open beef. Fold up the beef and tie closed with kitchen string.
6. Brush the tied loin with 1 tablespoon oil and sprinkle with onion powder, black pepper, and 1/2 teaspoon salt. Set in a roasting pan or Dutch oven. Insert a meat thermometer.
7. Bake for 45 to 55 minutes, until meat thermometer reads about 160 degrees F for medium. Remove from oven and let the meat rest for 10 minutes, then slice and serve.
