Ingredients
500 g | spinach, washed and trimmed |
1 | onion, chopped |
1 clove(s) | garlic, chopped |
1 | red chilli pepper, chopped |
400 g | salmon fillet, cut into 3cm cubes |
400 g | pasta |
salt and pepper | |
3 tbsp | oil |
½ tsp | lemon zest |
300 ml | single cream |
Instructions
Cook the pasta in salted water until al dente.In a saucepan heat 1 tablespoon of the oil. Sauté onion, chilli and garlic until lucent. Add the dripping wet spinach and cook until wilted. Pour in the cream and bring to a boil. Season to taste with salt, pepper and lemon zest.
In another pan, stir-fry the salmon in the remaining oil until just cooked. Don’t cook too long, otherwise the fish gets dry. Season with salt and pepper.
Drain the cooked pasta, transfer onto warmed plates and ladle the sauce over the pasta. Arrange the fish pieces on top and serve immediately.
