Ingredients
1 kg | asparagus, woody ends removed |
80 g | cornflour |
80 ml | water |
salt and pepper | |
5 g | baking powder |
1 | egg white |
2 clove(s) | garlic, minced |
50 g | ginger, grated |
50 g | red chillies, seeded and chopped |
150 ml | rice vinegar |
50 g | sugar |
250 ml | oil |
200 ml | sour cream |
Instructions
Cut the asparagus in halves and cook in salted water until al dente. Drain and allow to cool.Whisk the egg white until stiff.
In a saucepan, mix together the water, cornflour and baking powder. Stir in the garlic, ginger, chili, vinegar and sugar. Season with salt and pepper. Simmer over low heat until thickened. Allow to cool. Fold in the beaten egg white.
In a pan, heat the oil. Turn the asparagus in the batter and fry in the oil until golden brown.
Serve with the sour cream.
