Ingredients
1 medium | cauliflower, cut into florets |
2 small | onions, cubed |
1 ½ liter(s) | vegetable stock |
250 ml | creamed coconut milk |
1 tbsp | hot red curry paste |
1 tsp | ghee butter |
1 tsp | chopped chives per serving |
dash(es) | natural yogurt per serving |
Instructions
Gently soften the onions in a pot, add the cauliflower. Add half of the stock and boil gently until the cauliflower is cooked very well.Put the pot contents into a blender and blend until smooth.
Pour back into the pot and add the remaining stock and coconut milk.
Heat everything up again and add curry paste according to how much you feel is appropriate. For example: use 3 tbsp curry paste or freshly chopped chillies.
Serve with a dash of yogurt and a sprinkling of chives.
