|1 small||green bell pepper, diced|
|1 stalk(s)||celery, diced|
|1 small||ripe avocado, peeled and diced|
|2 tsp||lemon juice|
|250 g||bean curd, diced|
|3 tbsp||olive oil|
|3 tbsp||chilli sauce, sweet and sour|
|4||wheat tortilla wraps|
InstructionsSprinkle the avocado with lemon juice. In a pan, sauté the garlic, onion and chilli in oil until lucent. Add the carrots, bell pepper, celery and 4 tablespoons of water. Cook for 5 minutes. Add the bean curd and cook for 2-3 minutes.
Take from heat and fold in the avocado and the chilli sauce. Season with cumin and pepper. Heat the tortillas briefly in the oven or in a dry pan.
Top the tortillas with the lettuce leaves. Spread with spoonfuls of the bean curd mixture. Roll up and serve immediately.
