Ingredients
1 | onion, sliced |
2 clove(s) | garlic, chopped |
2 | carrots, diced |
1 | chilli, chopped |
1 small | green bell pepper, diced |
1 stalk(s) | celery, diced |
1 small | ripe avocado, peeled and diced |
2 tsp | lemon juice |
250 g | bean curd, diced |
3 tbsp | olive oil |
3 tbsp | chilli sauce, sweet and sour |
¼ tsp | cumin |

4 | wheat tortilla wraps |
4 | lettuce leaves |
Instructions
Sprinkle the avocado with lemon juice. In a pan, sauté the garlic, onion and chilli in oil until lucent. Add the carrots, bell pepper, celery and 4 tablespoons of water. Cook for 5 minutes. Add the bean curd and cook for 2-3 minutes.Take from heat and fold in the avocado and the chilli sauce. Season with cumin and pepper. Heat the tortillas briefly in the oven or in a dry pan.
Top the tortillas with the lettuce leaves. Spread with spoonfuls of the bean curd mixture. Roll up and serve immediately.
