Ingredients
Serves: 8- 2 egg whites
- 1 egg
- 1 3/4 cups mashed sweet potatoes
- 1/2 cup 2-percent milk
- 1/4 cup reduced-fat butter, melted
- 1 tablespoon bourbon
- 1-1/2 teaspoon vanilla extract
- 2/3 cup packed brown sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 reduced-fat graham cracker crust (8 in.)
Preparation method
Prep: 15 mins | Cook: 45 mins1. Preheat oven to 350 degrees F.
2. In a mixing bowl, combine the egg whites, egg, potatoes, milk, butter, bourbon, and vanilla. Whisk until well-blended.
3. In a separate bowl, stir together the sugar, flour, cinnamon, salt, nutmeg, and cloves. Whisk into the sweet potato mixture and pour into the pie crust.
4. Bake for 45 to 55 minutes. Cool.
