Ingredients
1 tbsp | butter |
1 medium | onion, finely chopped |
250 g | risotto rice |
100 ml | white wine |
1 liter(s) | vegetable or fish stock |
1 pack(s) | smoked mackerel, 250-300g combined weight |
2 | spring onions or scallions, sliced |
100 g | fresh spinach |
Instructions
Heat a larg pan and add the butter and allow to melt. Add the onion and fry for about 5 minutes until softened. Add the rice and mix until well coated in butter. Add the wine and allow to cook until it has all but disappeared.Pour in about half the stock and stir the mixture thoroughly and leave to cook for about 10 minutes. Add about half the remaining stock and stir again and cook for 5 minutes. Add small amounts of stock at similar intervals until the rice is tender.
Remove the skin from the mackerel and any dark brown flesh and flake the remainder, but leave the flakes as large as possible. Stir that into the rice together with the onions and spinach and cook until the spinach has just wilted.
Serve immediately.
