Ingredients

300 g frozen puff pastry, thawed
100 g bacon, diced
1  onion, diced
150 g mushrooms, sliced
2 tbsp tomtato purée
2 tbsp butter
1  egg yolk
2 tbsp milk
salt and pepper

Instructions

Sauté the onions together with the bacon. Add the mushrooms, tomato purée and butter and season with salt and pepper. Cook until all the liquid has evaporated.

Roll out the puff pastry, 1cm thick, then cut out circles, e. g. with a cup (7-8cm in diameter). Place on each circle approx. 2 teaspoons of the mushroom filling, moisten the edges with water, then turn the pastry over the filling to shape half moons. Firmly press the edges together. Pierce the turnovers with a fork.

Preheat the oven to 180°C.

Whisk the egg yolk together with the milk and brush the turnovers with the egg wash.

Rinse the baking sheet with cold water, place the turnovers on the sheet and allow them to rest for 15 minutes.

Bake the mushroom turnovers on the second rack from the bottom for 25 minutes. Serve while still warm.
