Ingredients
250 g | black cherries, pitted, some stones reserved |
1 cup(s) | red wine |
½ cup(s) | water |
3 | cloves |
1 stalk(s) | cinnamon |
½ tsp | grated lemon peel |
1 tsp | corn starch |
½ glass(es) | madeira |
1 tbsp | lemon juice |
1 tbsp | ice-cold butter |
salt |
Instructions
Crush some of the cherry stones.In a saucepan, combine the crushed cherry stones with the cherries, water, wine, cloves, cinnamon and lemon zest. Cook until the cherries are tender. Pass the sauce through a sieve into a saucepan.
Mix together the corn starch and the Madeira and stir this into the cherry sauce. Reheat again and season to taste with lemon juice and salt. Whisk in the butter.
Serve with any kind of meat.
