Ingredients
2 kg | potatoes, peeled and cubed |
100 g | single cream |
butter | |
1 tbsp | olive oil |
1 small | onion, sliced |
1 small | leek, sliced |
8 | rashers of smoked bacon, sliced |
12 | sausages |
440 g | tinned chopped tomatoes |
1 pint(s) | gravy or thick beef stock |
salt and pepper, to taste | |
2 tbsp | balsamic vinegar |
Instructions
Boil the potatoes in salted water for approximately 20 minutes until soft. Drain well and mash with cream and butter until smooth with no lumps. Season to taste and set aside.Heat oil in a pan. Fry onions and leeks for 2 minutes. Add bacon and fry for a further 3-4 minutes. Transfer the ingredients to a plate leaving the oil in the pan. Place the sausages into the pan and fry until done. Return the onions, leeks and bacon along with the juices on the plate. Add tinned tomatoes, gravy and balsamic vinegar. Season with salt and pepper to taste. Mix well and cook for 5 minutes.
Transfer to a large ovenproof dish. Top with the mash and bake in the oven at 200°C for 20-25 minutes until slightly crispy.
