Ingredients
For the Base: | |
100 g | dry breadcrumbs |
3 tbsp | butter, melted |
For the Filling: | |
700 g | cream cheese |
4 medium | eggs |
225 g | smoked salmon, chopped |
4 medium | spring onions, sliced |
2 tbsp | chopped dill, or to taste |
Instructions
Preheat the oven to Gas Mark 3, 170°C, 325°F.Lightly grease a 9-inch, 22cm springform cake tin.
To make the base: mix ingredients together in a bowl until well coated. Transfer to the tin and press firmly into base. Bake for 10 minutes. Remove and allow to cool.
To make the filling: using an electric mixer, beat the cheese until light. Add the eggs one at a time and mix at low speed after each addition, until just blended. Stir in remaining ingredients and mix until evenly distributed.
Pour onto prepared base.
Bake for 1 hour or until the centre is almost set, but slightly wobbly. Run a knife or spatula around the edge of the tin to loosen. Cool before removing side of tin.
Refrigerate for at least 4-6 hours, but preferably overnight. Remove from refrigerator and transfer from tin base to a serving platter. Allow to stand at room temperature for about 15-20 minutes before serving.
Serve with biscuits or crackers, as for cheese or paté, or with a small portion of salad as a starter.
About the recipe:
The recipe simply specifies ‘smoked salmon’. This may be the cold, smoked salmon commonly available from the deli counter or pre-packed at your local supermarket, and which may be rather expensive. Alternatively, you could also use hot smoked salmon, which is fully cooked, and possible to undertake at home with everyday utensils (if properly protected). The latter takes very little time, requires no special ingredients – salmon, rice, sugar and tea bags – see a separate recipe posting.
