Rosemary and honey ice cream recipe details
Ingredients
500 ml | double cream |
500 ml | single cream |
35 sprig(s) | rosemary, rinsed and air dried, you may need 50-60 |
8 large | egg yolks |
160 ml | honey |
1 tbsp | icing sugar |
Instructions
Place all the cream and rosemary in a large heavy-based saucepan. Bring mixture close to boiling point and then remove from heat. Cover and allow to stand for about 15 minutes.In a large bowl whisk the egg yolks, honey and sugar. Pour in the cream mixture as a stream, whisking continuously – a food mixer with a balloon whisk attachment will help here, unless you have someone to assist. Pour the mixture into the pan and cook over a moderate-low heat, stirring until it thickens sufficiently to coat the back of a spoon. Strain the mixture through a fine sieve into a bowl and discard the herb.
Allow the mixture to cool completely and then chill for about an hour in the refrigerator. Pour the chilled mixture into an ice cream machine and freeze according to manufacturers’ instructions. Serve immediately, or transfer to a covered container and store in freezer until required.
About this recipe:
I was given this recipe by a former neighbour who was married to a Greek. As rosemary and honey feature quite heavily in Greek cooking, that may have been its attraction. Fortunately, she had two quite large rosemary bushes in her front garden and at least one more in her back garden. I was allowed reasonable access to the rosemary at the front but was careful to limit the amount I took. There were a couple of others I knew who also grew rosemary and I would occasionally ask if I could have a few sprigs. If I were to use this recipe, I would have needed to buy some.
Since that time, some years ago, all of those who had the bushes have either removed them or moved away and I no longer have these sources.
