Roast beef fillet recipe details
Ingredients
1 kg | beef fillet |
60 g | parsely, chopped |
60 g | chives, chopped |
¼ tsp | thyme |
1 tsp | salt |
1 tsp | pepper . freshly ground |
200 ml | beef stock |
60 ml | red wine vinegar |
6 tbsp | butter, to baste the meat |
2 tbsp | butter, for the sauce |
4 | eggs, yolks only |
Instructions
Preheat the oven to 180°C.Preparing the beef:
Place the fillet in a roasting dish, brush with the butter and place in the oven. Roast for 30 minutes, basting every five minutes with some of the remaining butter. When done set the beef aside to rest in a warm place.
Making the Sauce:
Place all the remaining ingredients, except the egg yolks, in a saucepan and bring to a quick boil. Then leave to simmer over low heat for 15 minutes.
Remove about 60ml of the sauce and in a separate bowl mix together the sauce and the egg yolks, beating continuously until well blended.
Return the egg mixture to the saucepan and cook, stirring continuously until the sauce begins to thicken. Now stir the meat juices into the sauce and cook for a few further minutes.
Take the sauce off the heat, slice the beef into 1 cm thick slices and arrange these on a plate. Spoon the sauce over the meat and serve immediately.
