Risotto with oyster mushrooms recipe details
Ingredients
2 | onions, chopped |
4 tbsp | oil |
1 glass(es) | dry white wine |
350 g | risotto rice, e.g. Arborio or Vialone |
1 l | chicken stock |
salt and freshly ground black pepper | |
250 g | oyster mushrooms, halved or quartered |
2 tbsp | butter |
3 tbsp | freshly grated Parmesan cheese |
Instructions
In a saucepan, heat the oil. Sauté the onions until lucent. Stir in the rice and cook stirring for another minute. Pour in the wine and cook until the liquid has evaporated.Add a ladle of stock and let the rice absorb it, stirring constantly. Allow each ladleful of stock to be absorbed before adding the next one and carry on adding stock until the rice is done.
In a pan, melt half of the butter. Add the mushrooms and cook for some minutes. Stir the remaining butter and the Parmesan into the rice. Season to taste with salt and pepper. Fold in the mushrooms and serve.
