Ricotta pancakes recipe details
- Ingredients
- 2/3 cup milk
- 1 cup ricotta cheese
- 1/2 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 eggs, separated
Beat together egg yolks, milk, ricotta, flour, baking powder, and salt. Beat egg whites until stiff and fold into flour mixture. Work gently, as mixture deflates quickly. Bake on a greased griddle until puffed and lightly browned on bottom. Serve with lemon sauce. Also very good with berry sauces and a dollop of sour cream or whipped cream. Frequently served at The Gables Bed and Breakfast Inn with a dollop of sour cream, and a dollop of both apricot and strawberry jams, and garnished with fresh berries and kiwi slices. Serve sausage or bacon on the side.
