Red bean soup recipe details
Ingredients
2 large can(s) | kidney beans, drained |
1 ½ l | vegetable stock |
1 | onion, chopped |
2 clove(s) | garlic, minced |
2 tbsp | oil |
2 tbsp | tomato puree |
lemon juice | |
1 tsp | paprika powder |
4 slice(s) | toast, cut into 2cm cubes |
2 tbsp | butter |
2 | hard boiled eggs, peeled and diced |
salt and pepper | |
sugar | |
1 stalk(s) | celery, diced |
1 bunch(es) | parsley, chopped |
1 | carrot, sliced |
Instructions
In a saucepan, heat the oil. Fry the onion, celery and the carrot until soft. Stir in the garlic and the tomato purée and cook for another minute. Pour in the stock and the beans and bring to a boil. Cook for 15 minutes. Season to taste with salt, pepper, sugar, paprika powder and lemon juice.In a pan heat the butter and fry the bread cubes until golden all around. Ladle the soup into soup plates and serve sprinkled with the croûtons, egg and parsley.
