Ingredients

500 g fresh raspberries, rinsed and dried, plus extra for garnish if wished
450 g caster sugar
480 ml buttermilk
8 sprig(s) mint, for decoration


Instructions

Combine sugar and raspberries in a bowl and allow to stand for about 30 minutes. Pour into a blender and process until smooth. Strain through a fine-mesh sieve into a freezerproof container. Stir in the buttermilk.

Cover and freeze overnight.

Remove from freezer and place in a bowl. Break the frozen mixture apart and use an electric mixer to whisk until smooth. Pour back into container and refreeze for about 3 hours until set.

Serve in glasses with extra raspberries and a sprig of mint.

Option: add a scoop to glass of good lemonade for a refreshing drink on a hot day.
