Raspberry sherbert recipe details
Ingredients
500 g | fresh raspberries, rinsed and dried, plus extra for garnish if wished |
450 g | caster sugar |
480 ml | buttermilk |
8 sprig(s) | mint, for decoration |
Instructions
Combine sugar and raspberries in a bowl and allow to stand for about 30 minutes. Pour into a blender and process until smooth. Strain through a fine-mesh sieve into a freezerproof container. Stir in the buttermilk.Cover and freeze overnight.
Remove from freezer and place in a bowl. Break the frozen mixture apart and use an electric mixer to whisk until smooth. Pour back into container and refreeze for about 3 hours until set.
Serve in glasses with extra raspberries and a sprig of mint.
Option: add a scoop to glass of good lemonade for a refreshing drink on a hot day.
