Raisin oatmeal cookies recipe details
- Ingredients
- 1 cup (2 sticks) margarine or butter, softened
- 1-1/4 cups firmly packed brown sugar
- 2 eggs
- 1/2 teaspoon vanilla
- 1-1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt (optional)
- 1/2 teaspoon cinnamon
- 3 cups oats (quick or old-fashioned, uncooked)
- 1 cup raisins (or chocolate chips)
- 1 cup chopped nuts (optional)
Heat oven to 350 degrees. Beat together butter and sugar until creamy. Add eggs and vanilla; mix well. Add combined flour, soda, salt, and cinnamon; mix well. Stir in oats, raisins/chips, and nuts. Drop by rounded Tablespoonfuls onto ungreased cookie sheet. Bake 10 to 12 minutes or until light golden brown. Cool 1 minute on cookie sheet; remove to wire rack. Cool completely.
Makes: about 3-1/2 dozen cookies.
