Radish and potato salad recipe details
Ingredients
1 kg | potatoes |
2 bunch(es) | radishes, sliced |
1 bunch(es) | chives, chopped |
75 g | crème fraîche |
salt and freshly ground black pepper | |
150 ml | vegetable stock |
50 ml | white balsamic vinegar |
3 tbsp | olive oil |
Instructions
Cook the potatoes in salted water until done. Drain and allow to cool a little bit. Peel and slice the potatoes.Bring the stock to a boil. Stir in the vinegar and season with salt and pepper. Pour the mixture over the potatoes and allow to soak for 15 minutes.
Stir in the oil, the radishes and the chives and toss. Stir in the crème fraîche. Check seasoning and correct if necessary.
